How should it be cooked? You can steam spinach or sauté it in a little oil. Prolonged cooking changes its color and texture. Preparing only what you need reduces leftovers.

How should it be stored? Improper storage of nitrate-rich vegetables can allow bacteria to convert nitrate to nitrite.
