How to Store Dry Pasta and How Long It Lasts

Dry pasta is made from flour and water (sometimes eggs) and contains almost no moisture, so it can last for 1–2 years in an airtight container or even in its original packaging without spoiling. The main risk is not mold, but absorbing moisture and becoming soft or attracting insects if left open for a long time. Egg pasta has a somewhat shorter shelf life than plain pasta because it contains egg powder and is generally recommended to be used within 1 year.

How should an opened package of pasta be stored?

Dry pasta from an opened package should not be left in its original packaging; transfer it to an airtight jar or container. Pasta left in an open package absorbs moisture from the kitchen and may become slightly brittle or, conversely, damp within a few weeks. When the container is sealed tightly, the pasta is protected from both insects and moisture. Keeping different pasta shapes (spaghetti, penne, and bow-tie pasta) in separate containers also makes it easier to keep track of how much of each type remains.

Can dry pasta attract insects?

Since dry pasta contains flour, it may become infested by flour beetles or grain beetles; small brown insects may appear within a few months, especially in warm, humid kitchens. If you notice fine, thread-like webs or dust inside the container, discard the pasta. To reduce this risk, keep pasta in a separate, tightly sealed container away from other flour-based products such as flour and bulgur. If an infestation starts in one container, it may quickly spread to other nearby sealed products.

Should egg pasta and whole-wheat pasta be stored differently?

Egg pasta should be used sooner than plain pasta, within about 1 year, because the egg powder it contains may oxidize over time and develop a slightly rancid odor. Whole-wheat pasta has a somewhat shorter shelf life than white-flour pasta because it contains bran, and storing it in a cool cupboard is recommended. Both types may fade in color and develop a slightly different flavor after cooking if left on a shelf in direct sunlight.

How can you tell if pasta has spoiled?

Do not use dry pasta if it has a bitter or rancid smell, a change in color, or small insects in the container. If pasta left in a wet or damp environment has a slightly sticky texture when broken instead of crumbling like powder, it has absorbed moisture. Plain dry pasta stored properly can generally still be cooked even after 2 years; the only requirements are an airtight container and a cool, dry place.

Should different types of pasta be stored together?

Keeping long pasta such as spaghetti in the same container as short pasta such as penne makes the container look disorganized and makes it harder to track how much of each type remains. For long pasta, choosing a tall, narrow jar with a height suited to the pasta prevents it from breaking. It is also important not to mix egg pasta with plain pasta: since their shelf lives differ, it becomes difficult to tell which batch is older when they are stored together, and the older batch may not be used before the fresher one.
