How to Store Fresh and Dry Yeast and Tell When It Has Lost Its Strength

Fresh yeast and dry yeast have different shelf lives and storage requirements; storing both types of yeast the same way is one of the most common reasons dough fails to rise. Fresh yeast can be stored in the refrigerator for 2 weeks or in the freezer for up to 3 months, while an unopened package of dry yeast lasts about 1 year at room temperature. Once opened, dry yeast should be transferred to an airtight container, refrigerated, and used within 3–4 months; dry yeast left open at room temperature may lose much of its strength within a few weeks.

How should fresh yeast be stored?
Fresh yeast stays fresh for 2 weeks in the refrigerator when tightly wrapped. For longer storage, divide it into small pieces and freeze it; it can then be used for up to 3 months. Thaw frozen fresh yeast slowly in the refrigerator before use; thawing it quickly at room temperature can damage the yeast cells. If fresh yeast turns gray or develops a dry crust on the surface, it has spoiled and lost much of its leavening power.

How should dry yeast be stored?
An unopened package of dry yeast can be stored in a cool cupboard at room temperature for about 1 year. After opening, transfer it to an airtight container, refrigerate it, and use it within 3–4 months. Leaving opened dry yeast on the kitchen counter rather than in the refrigerator can expose it to moisture and quickly weaken it. Dry yeast can also be stored in the freezer, where it retains much of its strength for about 2 years.

How can you tell if yeast has lost its strength?
To check whether yeast is still active, mix it with a pinch of sugar in warm water (about 38–40°C / 100–104°F) and let it stand for 10 minutes. Foam on the surface indicates that the yeast is active. If no foam forms after 10 minutes, the yeast has lost its strength and the dough will not rise. Water that is too hot (above 60°C / 140°F) can kill yeast immediately; for this test, the water only needs to feel warm to the touch, not hot or boiling.

How does improper storage affect dough?
Dough made with yeast that has lost its strength barely increases in volume during proofing and turns out dense after baking. In this case, the problem lies with stale yeast, not the recipe. As yeast weakens, dough takes noticeably longer to rise; dough that would normally double in 1 hour may not reach the same volume even after 3 hours with weak yeast.

Can fresh and dry yeast be substituted for each other?
Fresh yeast and dry yeast should not be used in equal amounts in a recipe; dry yeast is more concentrated, so recipes generally use about half as much. Using one in place of the other without adjusting the amount may cause the dough to rise less or more than expected. Both types of yeast also lose strength quickly if stored under the other type’s conditions; for example, leaving fresh yeast uncovered in a cupboard or keeping dry yeast in a damp place can cause both to weaken much sooner than expected.
