How to Store Tropical Fruits Like Kiwi and Mango

Tropical fruits like kiwi and mango are usually sold underripe, so they should first sit at room temperature to ripen and go into the refrigerator only once they have reached the desired softness. Refrigerating them too early slows or completely stops ripening.

How Can You Tell When They Are Ripe?

A mango is ripe when it gives slightly under gentle pressure and smells faintly sweet near the stem. A kiwi is ripe when a gentle squeeze reveals some give; if it still feels rock-hard, it is not ready. To speed ripening, place the fruit in a closed brown paper bag with another fruit that releases ethylene, such as a banana or apple. Mangoes and kiwis may ripen in 2–4 days this way, compared with about a week when left out in the open.

What Should You Do Once They Are Ripe?

Ripe mangoes and kiwis keep for 3–5 days in the refrigerator's crisper drawer. Refrigerating them at this point stops further ripening and helps prevent them from becoming overly soft and mushy.

How Should You Store Cut Fruit?

Eat peeled and sliced mango or kiwi within 2–3 days when kept in a sealed container in the refrigerator. The cut surface darkens and becomes watery as it is exposed to air. For longer storage, freeze the slices; they can be used in smoothies for up to 6 months.

What Is Chilling Injury?

An underripe mango or kiwi refrigerated too soon can develop dark spots beneath the skin and remain firm and flavorless. This irreversible condition is called chilling injury. To let the fruit develop its full flavor, do not expose it to cold before it has finished ripening.

Should Papaya and Bananas Be Stored the Same Way?

Papaya ripens much like a mango and can be stored the same way: leave it at room temperature first, then move it to the refrigerator. Bananas behave differently. A banana produces ethylene, so keeping it near other fruit speeds their ripening. But refrigeration quickly darkens the banana's peel, so keep it on the counter, a little apart from other fruit.

Does Freezing Change the Quality of Sliced Fruit?

Frozen kiwi and mango slices become noticeably softer and lose their original firmness when thawed, so they work better in a smoothie, ice cream, or baked dessert than served on a fruit plate. Freeze the slices in a single layer on a tray before transferring them to a bag; this keeps them from sticking together and makes it easy to take out only what you need.

Should You Eat Kiwi With the Skin On?

Kiwi skin is edible, but fuzz and dust can collect on it during storage, so lightly brush and dry the fruit before refrigerating it. If you plan to eat the skin, wash the fruit just before eating, not before storage; washing it early can leave moisture that speeds spoilage. Mango skin is not edible, so it does not need this brushing step; simply wipe the mango by hand before peeling it.
