How to Use Overripe Bananas

Before throwing away overripe bananas with spotted or fully darkened peels, consider a few practical ways to use them. At this stage, the flesh is very soft and its sugar content has increased, making it well suited to baked recipes. A common use is to mash the banana and add it to cake, bread, or cookie batter. Overripe banana acts as a natural sweetener and source of moisture, and may reduce the amount of added sugar or oil needed in the batter.

Does It Make Sense to Freeze Bananas?

If you will not use a banana right away, freeze it whole in its peel or peel and slice it first. A frozen banana may look alarming because its peel turns dark, but the inside does not spoil. When ready to use, peel it and add the softened flesh directly to batter. Frozen banana slices can replace ice in smoothies, adding body and natural sweetness.

Where Else Can You Use Mashed Banana?

Mash a ripe banana with a fork and stir it into pancake batter, oatmeal, or yogurt. Its natural sweetness may let you reduce added sugar in these recipes. In some recipes, mashed banana can also partially replace eggs or oil as a binder. Even if the peel has turned completely black, the banana may still be usable if the inside is soft and sweet. Discard bananas that are leaking from the peel, smell bad, or have mold.

Can You Slow a Banana from Turning Black?

Keeping bananas separate from other fruit may slow ripening. Fruits such as apples and pears release ethylene gas, which speeds up banana ripening. Keeping a banana on its own in a cool, shaded place may delay darkening by a few days. Wrapping the stem ends in plastic wrap is another common method; ethylene is released most heavily at the stem end, and covering it may slow ripening somewhat.

Once a banana is fully ripe, its peel may turn dark quickly if refrigerated, while the inside generally stays fresh for up to 1 week. Judge whether it is still usable by the texture of the flesh rather than the appearance of the peel. A standard banana bread recipe generally calls for a few medium ripe bananas. This amount adds enough moisture and a noticeable banana flavor. Using fewer may dry out the bread, while using more may make the batter too wet.

Mashing a banana with a blender instead of a fork produces a smoother mixture, although some recipes intentionally leave small banana pieces for texture. Let frozen banana slices sit at room temperature for a few minutes before using them to reduce strain on blender or mixer blades and help make a smoother mixture. Cutting bananas into small pieces before freezing also makes it easier to thaw only the amount you need.
