In What Order Are Dishes Served at a Dinner Party?

At a dinner party, dishes progress from light to rich: cold appetizers and olive oil dishes welcome guests at the table, followed by soup, a hot appetizer, and the main course with its sides. Dessert closes the meal, followed by tea or coffee. Used plates are cleared at each transition. The order is not a strict rule, but an arrangement shaped by the guests’ appetites and the pace of the kitchen.

The order of dishes depends on 2 things: how the appetite develops and what the kitchen can prepare at the same time. Appetite is fresh at the start and awakens with light, bold flavors; rich, filling dishes come next, and dessert closes the meal. In the kitchen, cold dishes can be prepared ahead, while hot dishes are cooked in sequence, with one finishing on the stove as another is served. A well-planned order takes the 2 factors into account: guests are not left waiting, the kitchen does not have to prepare everything simultaneously, and no dish gets cold while waiting.

The meal begins with cold meze (small appetizers), olive oil dishes, and bread placed on the table just before guests sit down. These dishes make the table welcoming and give the kitchen time to prepare the first hot course. Take the meze out of the refrigerator close to serving time; how long cold food can sit on the table is a separate consideration. Soup comes next. Serve it hot in bowls; do not bring the next course to the table until the soup bowls have been cleared, because then 2 hot dishes would be waiting on the table and one would get cold.

If served, a hot appetizer comes after soup: small, hot bites such as sigara böreği (cigar-shaped pastry rolls), içli köfte (stuffed bulgur dumplings), or mücver (zucchini fritters). Keep this course small; its purpose is to bridge the gap to the main course, not to fill guests up. The main course comes next, along with its sides: pilaf or pasta, salad, and pickles are served alongside meat dishes. At a traditional home meal, an olive oil vegetable dish sometimes comes after the main course; this order lets guests refresh their palate with a light, cool dish after the richer course.

After the main course, clear the table: remove used plates, serving dishes, the salt shaker, and the bread basket, then wipe away crumbs. Serve dessert on a clean table with clean plates. If serving both a syrup-soaked dessert and a milk-based dessert, do not put them on the same plate, because the syrup will run onto the milk-based dessert. Fruit can be served on a separate plate after dessert or alongside it. The meal ends with tea or Turkish coffee; in many homes, coffee comes after dessert, while tea is brewed and served with dessert or after guests leave the table.

Change plates at each transition because sauce from one course can affect the flavor of the next. Clear the soup bowls before the main course and the main-course plates before dessert; collect plates after everyone has finished, without rushing to take away the plate of someone who finishes early. The order is not a strict rule: at a small gathering, you can skip the hot appetizer or begin with meze instead of soup. What stays the same is the progression from light to rich: the meal ends with dessert, a rich course does not follow dessert, and dessert is not served alongside the main course.
