Mushroom Varieties: Which Are Edible and Which Are Poisonous?

Mushrooms can be used in many dishes, but edible and poisonous species can resemble one another. A photograph, color, smell, or short description cannot establish that a wild mushroom is safe.

Culinary species. Button mushrooms, oyster mushrooms, enoki, morels, and truffles are examples of different mushrooms used in cooking. Knowing these names is not enough to identify a specimen you have collected. For shopping and substitutions, choose correctly labeled products from reputable growers.

Wild mushroom risks. Do not eat a wild mushroom that has not been definitively identified by an expert. Poisonous look-alikes can cause serious illness; cooking does not make poisonous mushrooms safe. Some poisonings cause symptoms only hours later. Seek medical help immediately after suspected poisonous mushroom consumption, without waiting for symptoms.

Selection and storage. Do not use moldy or slimy mushrooms. Refrigerate fresh mushrooms according to package instructions and clean them before preparation. A fresh appearance does not establish whether the species is edible.

Culinary use. Use button or oyster mushrooms in sautés, sauces, and soups; cooking time depends on species, thickness, and recipe. Do not use enoki raw in salads or as a garnish; cook them thoroughly. Do not eat morels raw or undercooked either; reliable identification and appropriate preparation are both necessary.
