No Frozen Fruit? What to Use Instead

Without frozen fruit, the closest result comes from fresh seasonal fruit or dried fruit briefly soaked in water; depending on the recipe, both can largely take over frozen fruit's job. What is the advantage of frozen fruit? Frozen fruit is handy because it works in smoothies, cakes and desserts even out of season; freezing disrupts the fruit's cell structure somewhat, so it releases more liquid than fresh fruit once thawed. That's an advantage in something like a smoothie, but frozen fruit added to cake batter can release too much water while baking and thin the batter out. So picking a substitute means working out whether the recipe actually needs that extra liquid, or just the fruit's flavor. Which alternative works where? In smoothies and cold drinks, blending fresh fruit with ice largely mimics frozen fruit's chill and texture. In cake and cookie dough, fresh fruit tends to be the safer choice, since it avoids frozen fruit's tendency to release too much liquid. Dried fruit, soaked in warm water for 10–15 minutes and drained, softens and regains some moisture; in that state it can comfortably replace frozen fruit, especially in cakes and granola. What should you watch out for? With fresh fruit, out-of-season varieties tend to taste more watery and less intense, so it can help to bump up the sugar slightly if needed. With dried fruit, drain and discard the soaking water, or the recipe ends up with extra liquid and an overly concentrated sweetness. Whichever you choose, keep the fruit quantity the same as the recipe calls for; fresh or dried fruit holds a different amount of water than the frozen version, so changing the amount can shift the batter's consistency too. Can fruit be prepped and stored in advance? When fresh fruit is plentiful, it can be chopped ahead of time for a few days' use and kept in an airtight container in the fridge; this comes some way toward frozen fruit's convenience. Freshly chopped fruit doesn't keep as long as frozen, though, so it needs to be used within a few days. Stocking dried fruit is the longer-term fix; since it keeps for months at room temperature without spoiling, it can always be kept on hand as a ready alternative for whenever frozen fruit isn't available. If a smoothie turns out thinner than expected, adding a few more ice cubes largely makes up for the missing frozen fruit; this simple tweak brings the result close to the original. Leftover pulp from juicing fruit can also go into a recipe; since it's high in fiber, a small amount works well stirred into cake or muffin batter. A fruit recipe can also combine both fresh and dried fruit; this mix offers a bit of textural variety alongside the more concentrated flavor frozen fruit would have given. Whichever fruit you use, adding it to the blender last helps grind down skins and seeds more thoroughly, giving a smoother final texture.

Smoothie tarifinde dondurulmuş meyve kalmamıştı, taze meyveyi birkaç buz küpüyle blenderdan geçirdim; kıvam neredeyse aynı çıktı, hatta tadı daha canlıydı. Artık mevsiminde taze meyveyi tercih ediyorum.
