What Does the Star (★) Symbol on a Freezer Mean?

The stars on freezer compartments indicate the lowest temperature each compartment can reach and, therefore, how long it can keep food. 1 star indicates −6°C / 21°F, 2 stars −12°C / 10°F, and 3 stars −18°C / 0°F; a 4-star compartment can also freeze fresh food. For long-term storage of frozen food, the compartment should be at −18°C / 0°F or below; 1- and 2-star compartments are suitable only for short-term storage.

Stars are a statement about temperature, not a quality badge. The manufacturer uses this symbol to show how cold a compartment can get, so you can tell what to store in it. The symbol is usually printed on the compartment door, an inside wall, or a label chart in the user manual. 2 compartments in the same appliance can have 2 different star ratings, so the question is how many stars this compartment has, not how many stars the appliance has. Frozen food stays frozen here for only a few days; it is suitable for ice cubes and ice cream, but not meat or vegetables. A 2-star compartment reaches −12°C / 10°F and keeps store-bought frozen food for a few weeks. Neither type is designed to freeze fresh food; both are for storing food that is already frozen. Fresh food placed in these compartments will freeze, but because it freezes slowly, it will lose its texture.

A 3-star compartment stays at −18°C / 0°F or below. This is the temperature at which frozen food keeps its quality for months, and it is the standard for household freezers. A 4-star compartment adds a capability to the 3-star rating: it can freeze fresh food on its own, as well as store already frozen products. On labels, this is often shown with an additional 1-star symbol beside the three-star symbol, sometimes in a different color. If you regularly freeze meat, vegetables, or prepared food at home, this is the rating to look for.

This distinction matters in the kitchen. Raw meat placed in a 1-star freezer compartment inside a refrigerator freezes slowly, forming large ice crystals; when thawed, it releases its juices and dries out. The same meat turns out much better in a 3- or 4-star compartment. Store-bought frozen food packages carry the same symbol, along with a separate storage time for each star rating. That chart is not general guidance; it corresponds specifically to this classification and is provided by the food manufacturer. So the most reliable answer to how long to store a product is printed on its own package.

If you do not know the star rating of a compartment in your own appliance, check 2 places: the embossed marking or label on its door, and the user manual. If neither of those 2 sources is available, take a measurement: a freezer thermometer placed in the compartment will show its actual temperature after a few hours, and the reading alone tells you which rating it falls into. This measurement also shows whether an appliance with an aging door seal or reduced cooling capacity has fallen below the rating printed on its label. Take the measurement after the door has been closed for a few hours.
