Honey and pekmez syrup pair best with butter, kaymak (Turkish clotted cream), tahini and tree nuts — this classic quartet anchors the Turkish breakfast table. Both are intensely sweet, so they work well with anything that brings a savory, tangy or creamy contrast. They usually reach the table in small bowls, alongside a few kinds of bread and cheese. What pairings stand out at breakfast? The tahini-pekmez syrup combination is a staple of Aegean and Black Sea breakfasts; tahini's oily, slightly bitter edge tones down pekmez syrup's deep sweetness, and the two are stirred together with a spoon before being spread on bread. Honey, meanwhile, is usually spread on bread together with kaymak or butter, whose creaminess balances its runny sweetness and makes it linger longer on the palate. Salty, tangy cheeses such as Turkish white cheese, curd cheese or goat cheese go well with both; their saltiness sharpens the sweetness of honey or pekmez syrup rather than clashing with it. A drizzle of honey over salty goat cheese, in particular, turns up often on breakfast plates served either warm or cold. Walnuts and hazelnuts pair especially well with pekmez syrup — the pekmez syrup-and-walnut combination is a traditional winter pairing many households turn to, sometimes finished with a dusting of cinnamon. Which breads work best alongside them?Whole-grain breads such as whole-wheat or rye loaves offer a faintly sour base that balances the intense sweetness of honey and pekmez syrup. Plain white bread or toast, by contrast, has a more neutral taste, letting the distinct aroma of honey or pekmez syrup stand out on its own. Warm flatbreads like pide or bazlama soften the honey spread over them, making it easier to spread evenly. How do they pair with drinks?Honey is also stirred into warm milk or herbal tea; added cold it dissolves more slowly but keeps more of its aroma, while prolonged boiling weakens its scent. Pekmez, stirred into cold milk, makes a sweetened, energy-rich drink — a glass of milk with pekmez syrup before breakfast is a long-standing habit in many households. How are they used in desserts and snacks?Drizzled over oatmeal, granola or fruited yogurt, honey can stand in for a sugary syrup and tones down the yogurt's tartness. Pekmez, on the other hand, replaces sugar in recipes such as tahini cookies, semolina halva and pumpkin dessert, leaving a deeper, caramel-like note; in these recipes pekmez syrup is usually used at about half the amount sugar would be. On a fruit plate, a drizzle of honey over apple, pear or fig slices softens the fruit's natural tartness. Pekmez pairs well with charred vegetables like roasted pumpkin or eggplant, taking the edge off their smoky flavor and striking a sweet-savory balance. Which pairings should be avoided?Honey and pekmez syrup are not added alongside heavily salted or spiced main dishes — serving them next to roast meat or charred peppers, for instance, throws off the balance of flavors. Serving them on the same plate as acidic fruit such as orange or grapefruit can also set the two kinds of sweetness against each other. Their natural place stays the breakfast table, dessert recipes and light snacks.

Tahin-pekmezi çocukluğumdan beri yerim ama geçen ay ilk kez kaymakla balı denedim; kaymağın yağı balın tatlılığını gerçekten dengeliyor. Artık kahvaltı soframa ikisini birden koyuyorum, özellikle taze köy ekmeğiyle harika gidiyor.
