Evlek mushroom looks quite different from cultivated mushrooms. It is broad and large, with thick, juicy flesh. It is considered nutritious, with notable amounts of protein and sodium. Because it grows wild in damp places, it is one of the easiest wild mushrooms to find. The flavor and aroma of its fleshy part are among the main reasons it is considered delicious.

Where Does It Grow?

Evlek mushroom is most often found in highland pastures in the Black Sea region, especially in the provinces of Gümüşhane, Artvin, and Sinop. Wet, rainy highlands provide ideal growing conditions. Although it is most common in Türkiye's Black Sea region, it may also grow in other areas with a humid climate. It is eaten in parts of Asia, Europe, North Africa, and Australia and is used in many local recipes.

What Should You Keep in Mind When Foraging?

Elevation matters when gathering Evlek mushrooms; the higher and damper the area, the lower the risk of confusing them with another species. Even so, people without experience foraging for mushrooms are advised not to gather wild mushrooms alone. How Is It Used in the Kitchen?

For longer storage, slice and lightly sauté the mushrooms before freezing; prepared this way, they can be kept for months and cooked directly in a pan. They can also be dried. Before using dried Evlek mushrooms, soak them in warm water for a while to soften them.

Which Ingredients Pair Well with It?

The pronounced, earthy flavor of Evlek mushrooms is best highlighted by simple ingredients such as butter, garlic, and fresh thyme; heavy sauces can overpower their natural aroma. Dishes with kaymak (Turkish clotted cream) or white cheese are another classic pairing that complements their meaty texture. In Black Sea cuisine, Evlek mushrooms are often used in kuymak (a Black Sea cornmeal dish) made with cornmeal and as a Turkish flatbread (pide) filling. Because of their large size, they can also be grilled whole over embers or on a grill, then sliced and served. In kavurma-style dishes, cooking them with onion for a longer time lets the mushrooms release and then reabsorb their juices, intensifying their flavor.
