What Is Nutrient Synergy?

This kitchen article does not compare the health effects of nutrients with those of supplements. Nutrient synergy means that different nutrients work together to produce an effect that cannot be achieved from each one alone. Sometimes they help each other perform the same task; sometimes one nutrient helps increase another's absorption. Food science does not yet know exactly what causes this synergy in some foods. Some phytochemicals have not yet been discovered and identified, so it is not possible to combine them in a pill. When different ingredients come together in a recipe, they create new flavors and textures. Vitamins C and E are among the best-known examples and are often found together in leafy greens. Flavonoids in almonds work synergistically with vitamins C and E. Ginger can be added to dishes on its own or with other spices. Vitamins C and E work synergistically with beta-carotene; all three are found in spinach, cabbage, mustard greens, and other dark leafy greens. Fish can be baked or cooked in a pan and served in hot meals; its flavor varies by species and cooking method.

How Can You Combine These Foods in the Kitchen?

Many synergies, such as vitamin C increasing the absorption of iron from plant foods, happen when nutrients are combined in the same meal. There is no need to make this a separate effort; many classic Turkish food pairings already follow this idea. Vegetable dishes cooked with olive oil bring fat-soluble compounds and vegetables together on the same plate. Lemon squeezed over lentil soup, parsley and lemon added to salads, and pickles or tomatoes served with dried-legume dishes are traditional pairings that combine an acidic component with plant foods. Cheese and tomatoes at breakfast, garlicky yogurt over spinach, and arugula and lemon with fish fit the same pattern. In other words, instead of creating a new habit for synergy, it is enough to continue existing pairings mindfully.

How Does Cooking Method Affect These Pairings?

A food's composition can change depending on how it is prepared. When vegetables are boiled in water for a long time, some water-soluble compounds pass into the cooking water. Instead of discarding it, adding it to soup or sauce is a common kitchen practice. Steaming reduces this loss because the vegetables do not come into contact with water. Brief sautéing over high heat helps vegetables retain their color and texture. Cooking tomatoes works in the opposite direction: cooking makes some compounds in raw tomatoes more available, so cooked tomato sauce has a different profile from raw tomatoes. It is preferable to cook leafy greens soon after chopping them rather than leaving them to sit for a long time. Chopped vegetables lose color and freshness as they are exposed to air.

Why Is Variety Important on the Plate?

Foods are considered in terms of how they are prepared and served in the kitchen. Combining a variety of foods adds different flavors to the menu. The practical approach is simple: instead of eating a large amount of just one vegetable, add more colors to the plate. Including one ingredient from each of the dark green, orange, red, and white groups in the same meal is said to increase both the chance of synergy and the balance of flavors on the plate.
