What Is the Difference Between Pasteurized and UHT Milk?

The main difference between pasteurized milk and UHT milk is the temperature and duration of the heat treatment: pasteurized milk is heated at a lower temperature for a short time, while UHT milk is treated instantly at a much higher temperature. This difference directly affects the shelf life, flavor, and, to some extent, nutritional value of the two types of milk. How do the heat-treatment processes differ? Pasteurized milk is generally heated to 72–75°C / 162–167°F for 15–20 seconds. This destroys most harmful microorganisms, but does not completely eliminate some bacteria and enzymes in the milk. For that reason, pasteurized milk should be refrigerated and used within a relatively short time. UHT (ultra-high-temperature) milk is processed at 135–150°C / 275–302°F for a very short time, about 2–4 seconds. This intense heat destroys nearly all microorganisms and makes the milk sterile. The high temperature used in UHT processing slightly alters some of the proteins in the milk, giving UHT milk a subtly different taste from pasteurized milk, which some consumers describe as cooked. How do shelf life and storage conditions differ? After opening, pasteurized milk should generally be used within 5–7 days when refrigerated; even unopened, it must be kept in the cold chain. Thanks to its sterile packaging, unopened UHT milk can be stored at room temperature for months. Once opened, it should be refrigerated and used within a period similar to that for pasteurized milk. This long shelf life makes UHT milk a practical option for long trips, camping, or stocking up. Is there a difference in nutrition and use? During UHT processing, some heat-sensitive vitamins, particularly certain B vitamins, decrease somewhat, but key nutrients such as calcium and protein are largely preserved. For this reason, the difference in nutritional value is not large enough to make a noticeable difference in everyday eating. Because of the difference in taste, some recipes, especially plain milk-based desserts, are made with pasteurized milk. This difference is more noticeable in recipes such as rice pudding or muhallebi (milk pudding), where the flavor of the milk stands out. In recipes such as cakes and soups that combine milk with other ingredients, the difference between the two types of milk is usually not noticeable. Which milk should you use in which recipes? UHT milk is a practical choice for coffee, tea, cake batter, or soup, where milk is not the main ingredient and its flavor difference is not noticeable. In recipes where milk itself is the main flavor, such as plain milk-based desserts or drinking milk on its own, trying pasteurized milk may be more meaningful for those who want to compare the result. In both cases, checking the label for the actual heat-treatment temperature and expiration date is more reliable than relying only on the carton design. Packaging alone does not always make it possible to distinguish the two types; manufacturers usually provide this information in small print on the label.

Açtığım UHT sütü oda sıcaklığında bir gün unuttum, ertesi gün kesilmiş gibi topaklanmıştı. Açıldıktan sonra da mı buzdolabı şart, ambalajı steril değil miydi?

Sterillik yalnızca ambalaj kapalıyken geçerli, açıldığı an dış ortamdaki mikroorganizmalar sütle temas eder. Açtıktan sonra UHT sütü de pastörize süt gibi buzdolabında saklamayı deneyebilirsiniz, oda sıcaklığında bir gün gerçekten bu sonucu verir.

Kamp gezilerinde hep UHT süt götürüyorum, açılana kadar buzdolabı gerektirmemesi gerçekten büyük kolaylık. Kahveye kattığımda tadı pek fark etmiyorum ama sade içince pastörizeye göre biraz farklı olduğunu hissediyorum.

Sütlaç yaparken hep açık süt kullanıyorum ama UHT süt kullansam tadı gerçekten fark edilir mi, yoksa şeker ve vanilya bu farkı örter mi diye merak ediyorum.
