When buying pickles or fermented foods, check ingredients, salt content, storage instructions, dates, and package integrity. The presence or absence of vinegar does not establish the entire production process; some fermented recipes also contain vinegar.
Live cultures. “Fermented” alone does not establish that a product contains live probiotic cultures or has a particular health benefit. Heat processing and storage can affect cultures. Do not judge safety or probiotic content from cloudiness, sediment, or clarity.
Packaging. Do not buy swollen, leaking, cracked, or seriously damaged jars, and do not taste their contents. A vacuum sound or a concave lid does not replace safe processing.
Storage. Store unopened products at room temperature only if their label permits it; buy products requiring refrigeration from refrigerated storage. After opening, follow the label's conditions and time limit and use clean utensils. Do not estimate salt concentration from ingredient order; compare the nutrition information.
