What to Do if the Liquid in a Pressure Cooker Runs Low Too Soon

The most common reasons the liquid in a pressure cooker runs low sooner than expected are a gasket that is not sealing fully or heat that is set too high; as soon as you notice pressure venting as steam, turn off the stove and let the cooker cool safely, then add a small amount of hot water if needed and continue cooking. Why does the liquid run low faster than expected? A pressure cooker turns the water inside into steam and cooks with the pressure of that steam; an old gasket or one that is not seated properly lets some steam escape, and this leak causes much more water than normal to turn into steam and run out. Keeping the heat too high has a similar effect because the heat should be lowered once the pressure cooker reaches pressure; a cooker left over high heat consumes water much faster than it should. Starting with less water than the recipe requires can also cause the liquid to run out as cooking time increases and the bottom of the pot to begin scorching; this risk is especially high with meat and legume dishes that need long cooking times. What should you do if the liquid runs low early? If you notice a change in the sound or smell coming from the pressure cooker, turn off the stove immediately and wait for the pressure to drop using the safe method specified by the manufacturer (with cold water or naturally); never force the lid open before the pressure has dropped. Once the pressure is completely down, you can open the lid and check the amount of liquid inside. If it has dropped noticeably, adding water at a boil is safer than adding cold water because a sudden temperature difference can both lengthen the cooking time and cause metal stress in some cookers. If the bottom of the pot has darkened slightly but there is no burnt smell, the dish can usually continue cooking without problems; if there is a noticeable burnt smell, remove that part of the food and continue with the rest. How can you keep this from happening again? Regularly checking the gasket and replacing it when it loses flexibility is the most effective way to prevent water loss from leaks. Lowering the heat as soon as the cooker reaches pressure and keeping it only as low as needed to maintain pressure also prevents unnecessary rapid water loss. Is the risk the same for every type of dish? In dishes that need long cooking times, such as meat and legumes, liquid loss is a much more noticeable risk than in vegetable dishes that cook quickly; adding a little more water than the recipe specifies for these dishes provides a safety margin. In low-liquid, thick dishes (such as some stews), the amount of liquid is already limited at the start, which further increases the risk of it running low early, so it is even more important to check these recipes from time to time while cooking. In older pressure cooker models, it may be harder to see the pressure indicator clearly, which can delay noticing that the liquid is low; the clear pressure indicators on newer models provide an added safety benefit in this respect. If you are trying a recipe for the first time, dropping the pressure safely once halfway through the cooking time and checking the liquid is the most practical way to learn how much water that recipe uses in your own pressure cooker.

Contayı değiştirmeyi ihmal etmişim, nohut pişirirken kırk dakika sonra su bitmiş, dibi hafif kararmış ama yanık kokusu yoktu, üzerine sıcak su ekleyip devam ettim, sonuç yine de iyiydi.
