Why Does Chicken Breast Dry Out When Cooked?

Chicken breast contains much less fat and connective tissue than other chicken cuts, so it has less capacity to retain moisture during cooking. Even slight overcooking can dry it out.

Why does the lack of fat and connective tissue matter?
Fat and collagen in cuts such as thighs and drumsticks melt slowly during cooking and add moisture and flavor. Chicken breast contains little of either, so it has less of a buffer once its internal temperature passes the ideal point and can dry out quickly.

What happens to protein fibers as they cook?
As meat cooks, heat causes its protein fibers to contract and release water. The contraction is limited up to a moderate internal temperature, but as the temperature rises past a certain point, the fibers contract more tightly and release more water. Because chicken breast is lean, it has little reserve to make up for that moisture loss, and its texture can become dry and stringy.

Why does uneven thickness cause problems?
Chicken breast is thicker at one end than the other. The thin end may overcook before the thick end reaches the target temperature. If the whole piece is cooked for the same amount of time, the thin sections can dry out while the thicker section may remain undercooked.

Why does cooking over high heat increase the risk?
Over high heat, the outside of a chicken breast may pass the desired temperature before the center reaches it. Cooking it longer to bring the center up can dry out the outside further. Cooking over moderate heat, which brings the center and exterior temperatures closer together, can reduce the risk of drying it out.

How can you reduce dryness?
Pound the chicken breast to an even thickness, brine it in salted water in a covered container in the refrigerator before cooking, or cook it over low to moderate heat while checking its internal temperature. These approaches can reduce the tendency of breast meat to dry out. The common goal is to avoid letting its internal temperature rise more than necessary; take the breast off the heat when the thickest part reaches 74°C / 165°F.

Why does resting the meat help?
If you slice chicken breast as soon as it comes off the heat, juices between the fibers can run onto the plate with the first cut. Letting it rest for a few minutes gives heat time to spread more evenly and the fibers time to relax slightly and retain more liquid. This can reduce how much juice runs onto the plate when the meat is sliced.

Why may bone-in breast dry out less than boneless breast?
Bone acts as a mass that releases heat slowly to the surrounding meat, so the areas near the bone warm more gradually. Without that buffer, heat moves through a boneless breast faster and less evenly, increasing the chance of overcooked spots.
