Why Does Garlic Turn Green When Cooked?

Garlic can turn blue or green, particularly during pickling. This does not always mean spoilage, but color does not prove that the product has been prepared and stored safely either. The precise cause of a color change cannot be established from appearance alone.

How Can Color Changes Be Reduced?
Use fresh, mature garlic for pickles. Immature or sprouting garlic can turn blue in the jar. Ingredients and cookware can also affect color changes. Follow a reliable, tested pickling recipe; do not alter acidity, processing time or other safety steps to adjust the color.

What Are Common Preparation Mistakes?
Removing the sprout, cutting garlic differently or blanching it for a few minutes should not be treated as methods guaranteed to prevent color change. They do not replace safe canning procedures either. If there are signs of spoilage or uncertainty about safe storage, do not eat the product merely because the color change might be natural.

How Should Garlic in Oil Be Stored?
Immediately refrigerate homemade garlic-in-oil mixtures that have not been acidified using a reliable method at or below 4 °C / 40 °F. Store for no more than four days; for longer storage, freeze while still safe. Do not keep them at room temperature. Follow label instructions for commercial products; do not treat homemade mixtures as equivalent.

Can Green Garlic Be Eaten?
If a tested pickling recipe has been followed fully and the product stored correctly, a color change alone may not require discarding it. However, do not eat it if there is mold, an unpleasant smell, gas or leakage, or if preparation and storage conditions are unknown. Normal smell and appearance also do not guarantee safety, particularly in oil mixtures; do not taste a suspect product.
