Why Does the Oven Temperature Differ from the Display?

The indicator on an oven does not always reflect the actual temperature inside it exactly. The most common reasons are that the thermostat loses calibration over time, the oven signals that it is “ready” before it has fully reached the actual temperature, or the door is opened and closed frequently. In some ovens, this difference can reach 10–20°C / 18–36°F. This inconsistency is one of the most common reasons the same recipe cooks earlier in some ovens and later in others.

Why Does the Thermostat Show the Wrong Temperature?
The temperature sensor inside the oven can wear out or shift slightly over the years; this can cause the thermostat to show a temperature higher or lower than the actual one. If the sensor is too close to the back wall or heating element, a local hot spot there may make the thermostat signal “target reached” even while the rest of the oven is cooler. This deviation may increase over time; in an oven used for several years, the difference between the display and the actual temperature may be more noticeable than in a new oven. Voltage fluctuations in the electrical supply may also slightly affect the heating element’s power in some ovens; this is another, less well-known reason the same setting may produce a result that differs by a few °C from day to day.

Why Does the “Ready” Signal Come Early?
Many ovens beep as soon as they reach the set temperature, but that signal does not mean that the air inside the oven—and especially the mass of the racks and oven walls—has reached the same temperature. It may take another 10–15 minutes after the signal for the entire mass of a large, full oven to actually reach equilibrium. Putting a tray in the oven as soon as the signal sounds may therefore mean starting to bake in an environment that is cooler than the recipe expects.

What Happens When the Door Opens?
When the oven door opens, the internal temperature drops noticeably within a few seconds. The thermostat detects this and switches the heating element back on, but the response is not instantaneous, and it may take a few minutes for the oven to return to its actual temperature. Frequently opening the door to check on the food can keep the oven temperature fluctuating. This fluctuation can lengthen the baking time and lead to an uneven texture, especially in recipes such as cakes and pastries that require a stable temperature.

How Can You Measure the Actual Temperature?
The most practical way to check the accuracy of the oven’s display is to hang a separate oven thermometer on the middle rack, heat the oven to a predetermined temperature, and compare the thermometer reading with the display. If the difference is more than a few °C, you can adjust the setting in future baking to compensate for it. In convection ovens, a setting about 20°C / 36°F lower than for conventional ovens is generally sufficient because hot air is distributed more evenly; this difference is another source of confusion between recipes. Repeat this comparison every few months rather than doing it only once; the thermostat’s deviation can change over time, so a correction that worked last year may no longer be sufficient today.
