Why Preheat an Oven, and How Long Does It Take?

Preheating an oven helps make cooking more predictable because food may cook differently before the oven reaches the temperature shown on its dial. If food goes into a cold oven, it spends the first few minutes at a lower temperature. Doughs and batters that need to rise, such as cake batter or bread dough, may begin to set before they rise enough. Preheating usually takes 10–15 minutes in a conventional oven and 7–10 minutes in a convection oven, where hot air circulates more quickly.

What happens if you do not preheat the oven?
Cake batter placed in a cold oven warms gradually as the oven heats up. During that time, the leavening agent may lose some of its effect, and the top can begin to set before the cake has risen properly. The result may be flatter and denser. For meat and chicken, skipping preheating can delay browning on the outside; the extra cooking time needed to brown the surface may leave the inside overcooked. The difference can be especially noticeable with foods that bake quickly, such as pizza and bread. Their dough rises from the high heat during the first few minutes, and dough placed in a cold oven may miss that initial burst and turn out flat.

Why does preheating time vary by oven?
The power of the heating element, oven capacity, and insulation all affect preheating time. Small, well-insulated ovens reach 150–180°C / 300–355°F sooner than large, older ovens. In an older oven with a weakened heating element, preheating may take up to 20 minutes. An oven dial may not show the exact interior temperature, so checking with a separate oven thermometer is more reliable than relying on the dial alone.

Should a baking sheet go in during preheating?
Thick, heat-retaining items such as a pizza stone or cast-iron pan should be placed in the oven during preheating so they heat along with it. Then food placed in the oven meets a hot surface underneath, helping the base cook faster. Thin metal baking sheets make less of a difference and can be added after preheating. Be careful when placing cold dough on a hot tray: a sudden temperature change can crack some glass dishes, so keep glass dishes out of the oven during preheating.

What happens if you open the oven door during preheating?
Opening and closing the door before preheating is complete lets much of the hot air escape and increases the time needed to reach the target temperature. Most ovens give a sound or light signal when they reach the dial setting. Putting food in before that signal can undermine the purpose of preheating. When baking several batches in a row, opening the door as little as possible can help keep the temperature stable and make results more consistent. Watching through the oven window is safer than opening the door; turning on the interior light lets you check the food without changing the oven temperature.

Fırınım eski bir statik fırın, göstergede 180 dereceyi 10 dakikada değil neredeyse 20 dakikada gösteriyor; bu kadar uzun sürmesi normal mi, yoksa fırında bir sorun mu var?

Eski fırınlarda ısıtma elemanı zamanla zayıflayabildiği için 20 dakikaya çıkması bozukluktan çok yaygın bir durum; yine de fırın termometresiyle gerçek sıcaklığı kontrol etmenizi öneririm.
