Why Should Mushrooms Be Wiped with a Damp Cloth Instead of Washed?

Mushrooms are usually cleaned by wiping them with a damp cloth instead of rinsing them under running water, because their porous, spongy structure quickly absorbs water on contact. This excess water can make the mushrooms release unwanted liquid while cooking and give them a watery texture. Why does a mushroom's spongy structure hold so much water? A mushroom's cells are arranged in a much more porous, open structure than those of most vegetables. In nature, this structure helps mushrooms absorb moisture efficiently. In the kitchen, the same feature can be a drawback: when a mushroom is immersed in water and left to soak, its pores quickly fill, and it can absorb an amount of water that makes up a significant part of its weight. What problem does excess water cause during cooking? When a mushroom that has absorbed water is put in a pan, that excess water must evaporate first. As a result, the mushroom steams in its own liquid instead of browning and forming a golden crust. The result is a watery, soft texture instead of sautéed mushrooms, which is why dry cleaning is preferred, especially for mushrooms that will be browned over high heat. How do you clean mushrooms with a damp cloth? Lightly dampen a clean paper towel or kitchen cloth, then gently wipe dirt and debris from the mushroom's surface. On curved or recessed areas, a small brush can help remove debris without getting those areas wet. When is washing acceptable? If a mushroom is very dirty or will not be cooked right away, a brief, gentle rinse followed immediately by drying with a paper towel is an acceptable practice. The important thing is not to leave the mushroom soaking in water and not to skip drying it. This minimizes water absorption. Should all types of mushrooms be cleaned the same way? Wiping with a damp cloth is enough for mushrooms with smooth surfaces, such as button mushrooms and portobellos. For delicate, ridged varieties such as oyster mushrooms, a brief rinse may sometimes be unavoidable because dirt settles more easily between their folds. In that case, do not skip drying them immediately after rinsing. Is there a difference with wild mushrooms? Wild mushrooms generally have more dirt and leaf debris than cultivated mushrooms. In that case, first clean them with a dry brush, then give them a very brief rinse if needed; this cleans them while limiting water absorption. Should mushrooms be sliced before or after cleaning? Slicing mushrooms before cleaning increases the surface area exposed to water and speeds up water absorption. It is therefore recommended to wipe them whole with a damp cloth first, then slice them. This order helps prevent the mushrooms from absorbing unnecessary water. Does the same rule apply to canned or dried mushrooms? This rule does not apply to dried mushrooms, which are rehydrated in water and, on the contrary, need to soak for a specified amount of time. The dry-cleaning rule applies only to fresh mushrooms sold unfrozen.
