Barley bread is a dense, filling bread made from barley flour or a mixture of barley and wheat flour. Because barley's gluten gives the dough little elasticity, it is usually supplemented with wheat flour; barley also contains gluten, so barley bread is not gluten-free and is not suitable for people with celiac disease. It is a traditional bread in the rural kitchens of Anatolia.
