Beef tenderloin is a long muscle along the inner loin and spine of cattle. It does little work, which makes it very tender. Its lean, delicate texture makes it one of the most prized cuts of red meat. It is quickly cooked as steaks or medallions.
Where It’s Used
“Cut the beef tenderloin into thick medallions and sear them over high heat.”
