Striploin is a beef steak cut from the loin next to the tenderloin, with a strip of fat along one edge. It is more flavorful than tenderloin but slightly less tender. It is cooked as a steak on the grill or in a pan.
Where It’s Used
“Grill the striploin with its strip of fat and serve it medium.” For pregnant women, young children, older adults, and people with weakened immune systems, cook steak to an internal temperature of 63°C / 145°F and let it rest for at least 3 minutes.
