Bottom round is a straight-grained, moderately tender butcher’s cut from the lower part of the leg. It is used for boiling, roasting, and slicing. Its Turkish name, şekerpare, is also used for a dessert, but it refers to a different concept here.
Where It’s Used
“Slice the bottom round and cook it by boiling or roasting.”
