These Afyon-style cookies are made by mixing ground poppy seeds directly into the dough. The seeds are not used whole: their hulls are hard, so whole seeds crunch unpleasantly and do not release their oil. Toasting the ground seeds briefly in a pan is essential; untoasted seeds look like a dull gray spot in the dough and have little flavor.

Toast the poppy seeds

Toast the ground poppy seeds in a dry skillet over low heat for 3 minutes, stirring constantly. Remove from the heat when the aroma opens up and the seeds begin to glisten slightly; do not let them darken, or they will turn bitter. Spread them on a wide plate to cool.

Beat the butter and sugar

Beat the room-temperature butter with the sugar for 5 minutes, until pale. Add the egg and beat for 1 more minute.

Knead the dough

Add the cooled poppy seeds, flour, baking powder, and salt. Knead by hand for 4 minutes. The dough should not stick to your hands and should hold its shape when pressed in your palm. If it is sticky, add 20 g flour, but no more.

Shape and arrange the cookies

Pinch off walnut-sized pieces of dough and roll them between your palms. Arrange them with space between them on a parchment-lined baking sheet. Gently press each with the back of a fork to make a lined pattern. Keep the cookies no thicker than half a centimeter so the centers bake through.

Bake the cookies

Bake in an oven preheated to 175°C / 345°F for 18 minutes. The poppy seeds make the dough dark, so you cannot judge doneness by the tops; lift one cookie and check that the bottom is golden. Let the cookies rest on the baking sheet for 10 minutes, then transfer to a wire rack.

Reminder

Let the toasted poppy seeds cool completely before adding them to the dough. Hot seeds will melt the butter, causing the cookies to spread in the oven into a very thin sheet.

Haşhaşı kavurmadan kullandım, kurabiye ham bir tat verdi. Kavurunca koku bambaşka oluyor. Yumurtayı tek seferde değil azar azar kattım, bir anda koyunca yağ ve şeker karışımı kesildi ve hamur pütürlü oldu.

Fırından çıkınca yumuşak görünüyorlar, tepside soğuyunca sertleşiyor. Erken almaya çalışıp iki tanesini dağıttım. Tepsiye dizerken aralarında bolca boşluk bırakın, kurabiyeler yayılıp birbirine yapıştı.
