A staple of everyday Austrian home cooking, Faschierte Laibchen are made with ground meat bound with soaked bread and seasoned with sweet paprika and cumin. Air-frying instead of pan-frying makes them lighter.
Soak the stale bread in the milk for 5 minutes to soften, then squeeze firmly by hand to remove the excess milk.
Combine the ground beef with the grated onion, soaked bread, egg, parsley, sweet paprika, cumin, salt, and black pepper. Knead firmly by hand until sticky, then wet your hands and shape into flat patties.
Arrange the shaped patties on a tray and chill in the refrigerator for 15 minutes. This helps them hold together while cooking in the air fryer.
Lightly oil the air fryer basket and preheat it to 180°C / 355°F. Arrange the patties in a single layer and cook for 8 minutes. Flip and cook for 7 more minutes. If you do not have an air fryer, bake on a wire rack in an oven preheated to 180°C / 355°F for 20 minutes.
If you do not knead the mixture until sticky, the patties may fall apart in the air fryer. Do not skip the resting step. Allergen: Contains wheat (gluten), dairy, and eggs.
