Ajoblanco was enjoyed in Andalusia centuries before gazpacho, and it contains no tomatoes—it is a cold soup from before tomatoes arrived from the Americas. Almonds, stale bread, garlic, olive oil, water and a splash of vinegar: just six ingredients. Its creamy texture comes from an emulsion, not cream. Drizzle in the olive oil slowly and the soup turns silky and white. Green grapes on top balance the sharpness of the garlic.

Prepare the almonds

If the almonds are skin-on, blanch them in boiling water for 1 minute, transfer them to cold water, and slip off the skins with your fingers; brown skins will turn the soup gray and leave a bitter taste. Drain the blanched almonds. Remove the germ from the center of the garlic cloves, where most of the sharpness is.

Soak the bread

Soak the bread interior in water in a bowl for 3 minutes, then squeeze out the excess water in your palm. Use only the interior: the crust will not dissolve in the soup and can clog the strainer.

Blend the almonds and garlic

Put the almonds, garlic and salt in a food processor with 2 tablespoons of water. Process until a paste forms and the almonds release their oil, making the paste glossy; this may take 2–3 minutes. Rushing this step will leave the soup gritty.

Add the bread and water

Add the squeezed bread and half the ice water, then process on high until the mixture is white and completely smooth. Ice water helps keep the food processor from heating the mixture; warm almond oil can separate from the soup.

Emulsify the soup

With the processor running, drizzle in the olive oil in a thin stream; the soup will visibly thicken and turn glossy. Add the apple cider vinegar and process for 10 seconds more. If you pour the oil in all at once, the emulsion will fail and droplets of oil will remain on the surface.

Strain and adjust the consistency

Adjust the consistency with the remaining ice water: ajoblanco should pour from a spoon but be noticeably thicker than water. Pass it through a fine-mesh strainer to remove the almond pulp. Chill in the refrigerator, then divide among bowls and top with halved grapes and a few drops of olive oil.

Reminder

Chill the soup in the refrigerator for at least 2 hours before serving. Its flavor changes as it cools: the garlic becomes stronger, so adjust the salt and vinegar one last time after chilling.

Buzlu su emülsiyonu tutuyor, ılık suyla denedim ve çorba yağını bıraktı. Üzüm de servis anında konmalı, önce koyunca suyunu salıyor. Bademi de kabuklu değil soyulmuş kullanmak gerekiyor, kabuklu bademle çorba hem grileşti hem ağızda buruk bir iz bıraktı.
