A sweet Colombian arepa, arepa de choclo is made by mixing fresh corn with cheese and a little sugar, then cooking it in a skillet. Unlike the classic arepa made with white corn flour, it has a mildly sweet flavor.
Coarsely blend the corn, then mix it with the cheese, sugar, cornmeal, and salt.
Shape the mixture into flat disks.
Cook in butter over medium heat for 8–10 minutes, until golden on both sides.
Serve hot.
