Boil the bulgur

A traditional soup from the Sivas region, ayran aşı is a hearty combination of yogurt, cooked chickpeas, and fine bulgur. It is seasoned with a mint butter sauce and is a warming dish for winter.
Simmer the fine bulgur in one 200 ml measure of water until tender. Once it has absorbed all the water, remove it from the heat.
Whisk the yogurt thoroughly with the flour until smooth. Gradually add the remaining water to make a pourable mixture.
Pour the yogurt mixture over the cooked bulgur and chickpeas, stirring constantly as it comes to a boil. After it boils, reduce the heat and cook for another 10 minutes. Important: Keep stirring continuously or the yogurt may curdle.
Melt the butter and add the dried mint and Turkish red pepper flakes if desired. Cook for a few seconds, then drizzle over the hot soup and serve.
Important: To keep the yogurt from curdling when you add it to boiling water, first whisk it thoroughly with one 5 ml measure of flour. Then pour it in a thin stream while stirring constantly. This dish contains dairy and is not suitable for people with lactose sensitivity.
