Azerbaijani choregi is a soft bread made from yeasted dough enriched with butter and milk, shaped into small rolls, and brushed with egg yolk for a glossy finish. Baked in small batches in an air fryer, the rolls fit easily into a lunchbox.
Mix the lukewarm milk with the sugar and yeast and wait for it to foam. Combine the flour and salt, then knead them with the melted butter and egg.
Cover the dough and let it rise in a warm place for 45 minutes, until doubled in size.
Divide the dough into eight equal pieces and roll them into balls. Arrange them on a baking sheet with space between them.
Cover the rolls and let them rise for 20 more minutes.
Brush the rolls with egg yolk and arrange them in a lightly greased air fryer basket. Bake at 180°C / 355°F for 15 minutes, until golden. If you do not have an air fryer, bake them for the same time in an oven preheated to 180°C / 355°F.
Let the dough rise twice for softer rolls; do not shorten the process. When brushing on the egg yolk, keep it from running down the sides, or the rolls may not rise evenly. Contains wheat/gluten, milk and dairy, and eggs.
