A traditional Irish tea bread, barmbrack is made by soaking raisins and apricots in tea overnight, mixing them into yeasted dough, and baking it. Its moist, dense texture is best enjoyed in slices spread with butter.

How to make it?

Soak the dried fruit

Mix the raisins and apricots with the tea and refrigerate for 8 hours.

Make the batter

15 min

Mix the flour, brown sugar, baking powder, allspice, and salt. Add the fruit with its tea and the egg.

Bake the bread

60 min

Pour into a greased loaf pan and bake in a preheated 170°C / 340°F oven for 55–60 minutes, until a toothpick inserted in the center comes out clean.

Cool the bread

20 min

Remove from the pan and let cool.

Serve

Slice and serve with butter.

Reminder

Store in a covered container at room temperature for 4 days.
