A festive Portuguese appetizer, bolinhos de bacalhau are made by pressure-cooking previously desalted cod with potatoes, then mixing it with egg and parsley and frying it. These fritters are crisp outside and soft inside, and take a little skill to prepare.

How to make it?

Pressure-Cook the Cod and Potatoes

Place the cod and potatoes in a pressure cooker and add enough water to cover them. Close the lid and cook for 12 minutes from when the cooker begins to hiss.

Mash and Mix

15 min

Drain the cod and potatoes, then mash them and mix with the egg, onion, parsley, flour, and black pepper.

Cool the Mixture

20 min

Refrigerate the mixture for 20 minutes.

Shape the Fritters

15 min

Use 2 spoons to shape the cooled mixture into small quenelles.

Fry the Fritters

10 min

Fry the shaped fritters in hot cooking oil for 10 minutes, until golden on all sides.

Reminder

Cool the mixture thoroughly before shaping. Warm mixture sticks to your hands and does not hold its shape. Allergens: contains fish (cod), wheat (gluten), and eggs.

Düdüklüde 12 dakika bende yeterli olmadı, patatesler tam yumuşamamıştı ve 4 dakika daha pişirmem gerekti. Soğutma süresini de 30 dakikaya çıkarınca şekillendirmesi çok daha kolay oldu.
