Katmer is a hearty Anatolian breakfast dish made by spreading seasoned ground beef between thinly rolled layers of dough, folding them, and cooking them in butter in a skillet. It is crisp on the outside and soft inside.
Mix the flour, egg, water, and salt until a smooth dough forms. Cover the dough with plastic wrap and let it rest for 15 minutes.
Sauté the onion in a skillet, then add the ground beef, cumin, and black pepper. Cook for 10 minutes, until the meat releases its juices and they evaporate.
Roll the dough into a thin circle and brush it with melted butter. Spread the ground beef filling and parsley evenly over it, then fold the four corners inward to enclose the filling.
Add the remaining butter to a hot skillet and cook the katmer for 6 minutes per side, until golden.
Do not roll the dough too thin, or it may tear while folding and the filling may spill out. Allergens: contains wheat (gluten) and eggs.
