Brotchán foltchep is one of Ireland’s oldest soups. Leeks softened in butter are cooked with steel-cut oats in milk and vegetable stock, and the oats thicken the soup. No potato or flour is needed; the starch released by the oats gives it a velvety body, while the grains add a little texture. Parsley and a spoonful of cream finish the soup.

How to make it?

Clean the leeks

Trim off the root ends and the upper halves of the dark green leaves. Split the leeks lengthwise, rinse away any soil between the layers under running water, and slice them into thin half-moons.

Soften the leeks

Melt the butter in a wide pot. Add the leeks, cover, and cook over low heat for 8 minutes, until softened without browning and reduced to half their volume.

Toast the oats

Add the oats and stir for 2 minutes, until the grains are coated with butter and lightly fragrant.

Cook with the milk and stock

30 min

Add the milk and vegetable stock and bring to a boil. Reduce the heat and simmer with the lid slightly ajar for 30 minutes, scraping the bottom occasionally. The oats should open up and thicken the soup until it lightly coats the back of a spoon.

Finish the soup

Add the salt, black pepper, and chopped parsley and cook for 1 more minute. Remove from the heat, stir in the cream, and serve hot.

Reminder

Stir the soup often after adding the oats; the coarse oats sink to the bottom, and the milk can scorch there quickly.

Yulafı kavurma adımı fındıksı bir koku veriyor, atlarsanız çorba düz kalıyor. Tereyağında iki üç dakika, renk dönmeye başlayınca yeter; fazla kavurunca yulaf sütü emmiyor ve tanesi çorbanın içinde sert kalıyor.

Kesik yulaf yerine ezme yulaf koydum, çorba bulamaç oldu. Tarifte iri yulaf yazması boşuna değilmiş, tanesi duracak. İkinci sefer kesik yulafla yaptım, kaşıkta tane tane hissediliyor ve pırasanın yumuşaklığıyla iyi gidiyor.

Pırasanın yeşil kısmını da kullandım, renk koyulaştı ama tat güzel. Sadece en sert uçları attım. Yeşili kullanacaksanız daha ince doğrayın, beyaz kısımla aynı sürede yumuşamıyor ve çorbada çiğ kalan parçalar oluyor.

Doğru, süt ve krema kaynatılmaz. Sütü de kısık ateşte tutun, pırasa zaten suyunu vermiş oluyor.
