Sauté the onion and pastes
6 minSoften the grated onion in olive oil, then add the tomato paste and pepper paste. Cook over low heat for a few minutes.
This country-style soup cooks fine bulgur with tomato and pepper pastes in water. It is an affordable, quick meal made with simple ingredients and finished with a butter sauce flavored with Turkish red pepper flakes.
Soften the grated onion in olive oil, then add the tomato paste and pepper paste. Cook over low heat for a few minutes.
Add the water and bring to a boil. Stir in the bulgur, then simmer over low heat for 18 minutes, until completely tender.
Melt the butter, add the Turkish red pepper flakes and dried mint, and sauté for a few seconds. Drizzle over the hot soup and serve.
Cook the pastes over low heat to keep them from burning; burnt paste will make the soup taste bitter. Contains wheat (gluten) from the bulgur and dairy from the butter. Not suitable for people with celiac disease. Check packaged products for other allergens.
