Desalt the fish
20 minSoak the salted cod fillet in plenty of water for 20 minutes, changing the water once.
A Jamaican breakfast-table classic, this recipe cooks desalted cod fillet in a pan with chard leaves, onion, and tomato. Served without a starchy side, it makes a low-carbohydrate dish.
Soak the salted cod fillet in plenty of water for 20 minutes, changing the water once.
Boil the fish in fresh water for 10 minutes and drain. Remove the bones and skin, then flake it.
Heat the oil and sauté the onion, tomato, red chili pepper, and thyme for 10 minutes, until softened.
Add the chopped chard and flaked fish. Cook for 8 minutes, until the chard leaves are tender, then serve sprinkled with scallion.
If you do not soak the fish in water long enough, the dish will be much saltier than expected; taste it and, if needed, change the soaking water once more. Allergen information: Contains fish.
