Boil the yuca

A Colombian street-food favorite, carimañolas are made by mashing boiled yuca, stuffing it with ground beef, shaping it into torpedoes, and cooking it in an air fryer. They contain no dairy and can also be eaten cold as part of a picnic.
Boil the peeled yuca in plenty of water for 20 minutes, until tender. Drain it, remove the fibrous core, and mash while hot.
Sauté the onion and chopped garlic in cooking oil. Add the ground beef, season with salt and black pepper, and cook until the meat is no longer pink.
Mix the egg into the mashed yuca and knead. Flatten a portion in your palm, place some beef filling in the center, and seal it into a torpedo shape.
Lightly oil the shaped carimañolas, arrange them in the air fryer basket, and cook at 200°C / 390°F for 8–10 minutes, turning halfway through, until golden. If you do not have an air fryer, bake them in a preheated oven for the same amount of time.
Be sure to remove the tough, fibrous core from the yuca after boiling; otherwise, hard pieces will remain in the mash. Allergen: contains egg.
