One of Colombia’s easy appetizers, stuffed avocado is made by filling ripe avocado halves with a light mixture of tuna, corn, and lemon. No cooking is needed, so it can be prepared in minutes for picnics and outdoor meals.

Prepare the tuna

Drain the canned tuna well and flake it with a fork. Place it in a bowl with the finely chopped red onion.

Mix the filling

Add the drained canned corn, lemon juice, fresh cilantro, salt, and black pepper to the tuna mixture and combine well.

Stuff the avocados

Spoon the tuna filling into the seed cavities of the halved avocados and serve immediately.

Reminder

If you need to let the stuffed avocados sit briefly before serving, drizzle a few more drops of lemon juice over them to slow browning. Allergen: Contains fish (tuna).
