This Cornish specialty is made by steeping saffron in warm milk, then mixing it into yeasted dough with raisins. Slice and freeze the loaf to add a golden color to winter breakfasts.
Add the saffron threads to the warm milk and let steep for at least 10 minutes, until the milk turns a deep yellow.
Mash the fresh yeast into the saffron milk with the sugar and let it foam for 5 minutes. Add the salt to the flour, then knead with the melted butter, egg, and yeast mixture to make a soft dough. Fold in the raisins.
Cover the dough and let it rise in a warm place for 60 minutes, until doubled in size. Transfer it to a loaf pan and let rise for 30 minutes more.
Bake in an oven preheated to 190°C / 375°F for 30 minutes, until deep golden on top. Remove from the pan and cool on a wire rack.
Steep the saffron in warm milk for at least 10 minutes; adding it too soon will not fully release its color and aroma. Do not overknead the dough, or the bread will become tough. Contains gluten (wheat flour), dairy, and egg.
