Sauté the onion
5 minSauté the onion in the butter until tender.
A smooth soup made by sautéing sweet corn with onion, then blending it with milk and cream. Its mildly sweet flavor and silky texture make it a favorite, especially with children.
Sauté the onion in the butter until tender.
Add the corn kernels and sauté, stirring, for a few minutes. Sprinkle in the flour and cook briefly.
Add the vegetable stock and bring to a boil. Reduce the heat and simmer for 10 minutes, then blend until smooth.
Stir in the milk and cream and warm for a few more minutes. Remove from the heat without letting the soup boil.
Divide the hot soup among bowls and serve.
For a smooth soup without bits of corn skin, pass it through a fine-mesh strainer after blending. Contains milk and is not suitable for people with lactose sensitivity.
