This festive Turkish meatloaf is made by wrapping hard-boiled eggs and vegetables in seasoned ground meat and baking it as a roll. Sliced to reveal the egg-filled center, it makes an elegant main dish for gatherings.
Thoroughly knead the ground beef, grated onion, soaked and squeezed bread, crushed garlic, cumin, salt, and black pepper.
Spread the mixture into a rectangle on parchment paper. Arrange the hard-boiled eggs and carrot strips down the center. Use the paper to roll it up tightly and seal the ends.
Mix the tomato paste with olive oil and brush it over the roll. Transfer it to a baking pan and bake in an oven preheated to 190°C / 375°F for 45 minutes, until browned and cooked through. The center should not remain pink.
Remove the roll from the oven and let it rest for 10 minutes. Then cut it into thick slices and serve.
Press the meat mixture firmly around the filling and fully enclose the eggs; a loosely wrapped roll may fall apart as it cooks. Important: Cook the ground meat roll thoroughly; the center should not remain pink. Contains eggs and gluten (bread).
