A Ukrainian breakfast favorite, deruny are made by mixing grated potatoes with onion and a little flour, then pan-frying until golden. Served with sour cream, these simple pancakes are an economical choice.
Mix the grated potatoes, onion, egg, flour, and salt.
Scoop the mixture into hot oil and flatten. Pan-fry over medium heat for 3–4 minutes, until golden on both sides.
Drain on paper towels to remove excess oil.
Serve hot with sour cream.
Best eaten fresh. Store in the refrigerator for 1 day. Reheating in the oven helps retain some of their crispness.
