Peel the eggs, cut them in half, and carefully transfer the yolks to a bowl.
Mash the yolks with a fork. Mix in the mayonnaise, mustard and salt until smooth.
Spoon the filling into the egg white halves. Sprinkle with ground red pepper and chopped chives, if desired, and serve.
Important: Transfer the eggs to ice water as soon as they finish boiling. This makes them easier to peel and helps keep the yolks from turning green. Allergens: contains egg and mustard.
