Meaning “Fatima’s fingers”, doigts de Fatima are a classic Tunisian snack made by wrapping a minced-meat filling in yufka (thin Turkish pastry sheets), then frying. Their long, finger-like shape fits neatly into picnic baskets and lunchboxes.

Step by Step

How to make it?

1

Make the filling

15 min

Mix and knead the ground meat thoroughly with grated onion, parsley, egg, cumin, harissa and salt to make an even filling.

2

Wrap in the pastry

15 min

Cut each pastry sheet in half. Put a finger-thick line of filling at one end, moisten the edges with water and roll up tightly.

3

Fry

10 min

Fry the rolls in plenty of oil over medium heat for 10 minutes, until golden all over. Transfer to paper towels.

Reminder

Moisten the yufka edges with water and seal them tightly; otherwise, the filling may spill out during frying. Keep the oil at medium heat: if it is too hot, the outside will burn while the inside remains raw. Allergens: contains wheat (gluten) and eggs.
