These energy balls are made with natural ingredients such as rolled oats, dried apricots, walnuts and dates, and require no oven or stovetop. With no added sugar, they make a practical, filling snack for a school lunchbox.

How to make it?

Soften the dried fruit

Soak the dates and dried apricots in lukewarm water for 10 minutes to soften them, then drain thoroughly.

Process the ingredients

Process the rolled oats, walnuts, dates and dried apricots in a food processor until the mixture becomes sticky.

Shape into balls

8 min

Take walnut-sized pieces of the mixture and roll them between your palms into balls.

Coat with coconut

20 min

Roll the balls in shredded coconut, then refrigerate for at least 20 minutes to firm up.

Reminder

Dates and dried apricots are sticky, so lightly wetting your hands makes the mixture easier to shape. Allergen: contains tree nuts, including walnuts, and is not suitable for people with nut allergies. Check the oat package for a gluten statement, as this can vary by product.
