This winter dish is made by softening dried peppers in warm water and filling them with a ground beef and rice mixture. A staple of Anatolian kitchens after fresh pepper season ends, it brings out the concentrated flavor of dried peppers with the richness of beef.

How to make it?

Soften the Dried Peppers

20 min

Soak the dried peppers in lukewarm water for 20 minutes, until softened. Drain and squeeze out excess water; firm peppers may tear when filled.

Make the Filling

Mix the ground beef with the grated onion, rice, grated tomato, tomato paste, salt, black pepper, and mint.

Fill and Arrange

15 min

Fill the softened peppers two-thirds full with the mixture and pack them tightly into a pot.

Cook

30 min

Add enough hot water to cover the peppers, place a weight on top, and simmer over low heat for 30 minutes.

Reminder

Kıymayı tamamen çıkarıp yerine bulgur miktarını artırarak tamamen etsiz bir versiyonunu denesem, 30 dakikalık pişirme süresi kısalır mı, yoksa süreyi biraz daha uzatmam mı gerekir acaba?

Biberleri ıslatırken üzerlerine ağırlık koymayı unutmuştum ve yüzeyde kalan birkaç tanesi yeterince yumuşamadan sert kaldı, doldururken de iki tanesi elimde yırtıldı. Bir dahakine üzerlerine ağır bir tabak koyup bastıracağım, böylece hepsi eşit şekilde yumuşar diye düşünüyorum.
