This much-loved Turkish cold salad combines white beans, quickly boiled in a pressure cooker, with onion, tomatoes and a vinegar dressing. Slices of boiled egg make it more filling and complete the traditional presentation.

How to make it?

Boil the beans

20 min

Put the white beans, soaked overnight, in a pressure cooker and cover with fresh water. Close the lid and cook over medium heat for twenty minutes.

Rub the onion with salt

10 min

Massage the salt into the finely chopped onion and leave it to stand for 10 minutes. This mellows the onion’s pungency.

Mix the ingredients

Put the drained, hot beans in a large bowl. Add the onion, tomatoes, parsley, vinegar and olive oil and mix gently.

Serve

Transfer the bean salad to a plate, top with slices of boiled egg and sprinkle with Turkish red pepper flakes if you like.

Reminder

Do not skip soaking the beans overnight before boiling them, or they will not soften fully, even in a pressure cooker. Allergens: contains egg.

Piyazı bir gün önceden hazırlayıp buzdolabında bekletsem sirkenin tadı fazla mı baskın çıkar, yoksa ertesi gün daha mı iyi olur? Misafirlerim için önceden hazırlamak istiyorum ama ilk defa deneyeceğim.
