Served with olive oil on Cairo tables, dukkah is a dry mixture of hazelnuts, sesame seeds, coriander seeds and cumin, toasted separately and coarsely crushed. Pack it into small jars for an easy addition to a party spread.

Transfer the toasted ingredients to a plate and leave to cool, then coarsely crush in a mortar. Avoid grinding them into a fine powder.
Stir the salt and black pepper into the crushed mixture and store in an airtight jar.
Do not crush the ingredients too finely: grinding them to a powder will remove dukkah's characteristic crunch. Contains tree nuts (hazelnuts) and sesame.
