This soft Turkish flatbread is made from yeast dough pressed with the fingertips to form indentations that hold melted butter. The marks are functional: pressing the center while leaving the edge untouched keeps the middle from puffing, so the bread rises around the rim. It bakes quickly at high heat, above the usual temperature for bread.

Knead the dough

Dissolve the yeast and sugar in warm water and let it foam for 5 minutes. Add the flour, salt, and oil, then knead for 10 minutes; the dough should remain loose and slightly sticky. A firm dough will not make soft flatbread, so oil your hands instead of adding flour. Cover and let rise.

Divide the dough

Without deflating the risen dough, fold the edges inward and transfer it to the counter. Divide it into four equal portions. Shape each portion lightly into a ball and place it on a parchment-lined baking sheet. Cover and let rest for 10 minutes; dough that has not relaxed will not spread.

Spread and indent

Oil your hands and spread each portion on the baking sheet by pushing from the center toward the edges to form a 20 cm circle. Starting about two finger-widths in from the edge, press deeply with the tips of four fingers until the dough reaches the pan, making rows of indentations from one side to the other. If the indentations close right away, the dough has not risen enough; let it rest for another 15 minutes.

Prepare the topping

Whisk the egg yolk with the milk and brush it over the flatbread, working it into the indentations. Sprinkle with sesame seeds and nigella seeds. Cover for the second proof; the dough is ready for the oven when it has puffed and the indentations have become slightly shallower.

Bake at high heat

18 min

Preheat the oven to 250°C / 480°F with a rack near the top. This is hotter than the usual 200°C / 390°F range for bread so the crust can brown before the inside dries out. Bake the flatbread for 18 minutes, until golden on top and easy to lift from the pan. As soon as they come out of the oven, brush melted butter into every indentation and cover with a clean cloth.

Reminder

Let the dough rise until doubled, about 1 hour, then proof it on the tray for another 30 minutes after shaping. These times are not included in the recipe’s listed duration; skipping the second proof can cause the indentations to close in the oven.
