Prepare the cheese
5 minSlice the sulguni cheese 1 cm thick and lightly coat both sides with flour.
A quick Georgian snack, fried sulguni is made by thinly slicing a semi-hard cheese and frying it in butter until golden on both sides. Serve it hot, crisp on the outside and soft inside.
Slice the sulguni cheese 1 cm thick and lightly coat both sides with flour.
Melt the butter in a skillet and fry the cheese slices over medium heat for 3–4 minutes, until golden on both sides.
Sprinkle with dried mint and black pepper and serve immediately while hot.
Do not turn the cheese too soon after placing it in the pan; it may fall apart if you flip it before the underside is well browned. Serve it hot, since it becomes firm and rubbery as it cools. Allergens: wheat (gluten) and dairy.
